Chewy Oatmeal Raisin Cookie Recipe




Ingredients:

3 eggs, beaten
1 cup raisins
2 tsp pure vanilla extract
1 cup butter, softened
1 cup packed brown sugar
1 cup white sugar
2 1/2 cups all-purpose flour
1 tsp ground cinnamon
2 tsp baking soda
2 cups rolled oats

Directions:


1) Combine eggs, vanilla, and raisins in small bowl, cover and let stand 1 hour.


2) Preheat oven to 350 degrees F (175C)
3)In large bowl, cream together butter, brown sugar, and white sugar.

4) Sift together the flour, cinnamon, and baking soda.



5) Stir butter mixture into flour mixture.


6) Stir in the egg/raisin mixture and add the rolled oats.



7) Drop teaspoon size dough, 2 inches apart onto an UNGREASED cookie sheet.


8) Bake approximately 10-12 minutes or until lightly browned.


9) Transfer to cooling rack
